- 400 g Mushrooms
- 1 shallot
- 2 olive oil
- 400 g Mascarpone
- 100 g Whipped cream
- 1 tbsp Lemon juice
- 20 g parsley (1 bunch)
- 500 g Konjac noodles
- 1 small chili pepper
- 40 g freshly grated Gouda
- nutmeg
- pepper and salt
Clean and slice mushrooms. Peel and finely chop the shallot. Sauté mushrooms together with shallots.
Add mascarpone, whipped cream, and lemon juice to the pan and stir. Add a little water if necessary and bring to the boil briefly.
Meanwhile, wash the parsley, shake dry and chop finely. Stir half of it into the sauce—season with salt, pepper, and freshly grated nutmeg.
Rinse konjac noodles thoroughly with water and heat in boiling salted water for 2 minutes. Then drain in a colander, add to the sauce and mix gently.
Wash and clean the chili pepper and cut into fine rings. Divide the pasta with the sauce on plates and serve sprinkled with Gouda, chili, and parsley.
