Since the flavor enhancer glutamate is openly considered unhealthy, many manufacturers and producers resort to little tricks and hide the additive – albeit in smaller quantities – behind other terms such as yeast extract or seasoning.
Glutamate stimulates the appetite and can thus lead to obesity. It can also trigger certain intolerances.
In addition to yeast extract and seasoning, vegetable broths are often enriched with flavorings or contain too much salt.
However, you can still find what you’re looking for if you choose truly natural broths. Study the ingredient list very carefully and just look up an ingredient or two you don’t know about.
