This Peach Cobbler with canned peaches is a wonderfully fluffy, crispy, and fruity American recipe.

For this peach casserole, of course, you need peaches and preferably canned peaches. They are always fully ripe and sweet. You can also use pears, apples, plums, apricots, gooseberries, currants.

Delicious butter is melted in a baking dish. A sponge is added to the butter, then the peaches are placed on top, and finally brown sugar.

Equipment

  • Cooling rack
  • A dredger or shaker
  • Icing smoother
  • Food mixer
  • Baking parchment

Ingredients

  • 200 g  flour
  • 2 tbsp baking powder
  • 100 g sugar or  Erythritol-Stevia Mix if you're on keto
  • 1 packet vanilla sugar
  • 1 tbsp lemon sugar
  • 1 pinch salt
  • 150 ml milk
  • 1 egg
  • 100 g butter
  • 2 tbsp brown sugar/cane sugar or  Erythritol or Stevia Mix if you're on keto
  • 1/2 tbsp cinnamon

Instructions

  • Start by placing an ovenproof baking dish on the oven and preheat it inside to 180 degrees.
  •  Strain the peaches, reserving the peach juice. Cut the peaches into wedges.
  • Mix the flour, baking powder, 100 g sugar, vanilla sugar, milk, salt, egg, and lemon sugar in a bowl and whisk until smooth.
  • Put the butter in the preheated baking dish and melt it in the hot oven.
  • Then remove the casserole from the oven and, using a pastry brush, spread the batter in the baking dish. Brush the edges with it too.
  • Slowly pour the peach cobbler batter in a serpentine fashion into the baking dish on top of the butter. And do not mix them.
  • Spread the peach wedges on top of the batter.
  • Then sprinkle brown sugar and cinnamon and sprinkle on top.
  • Bake the Peach Cobbler in a preheated oven for about 45 minutes until crispy brown. The Peach Cobbler is not done until it rises as high in the center as it has around the edges.
  • Serve the hot Peach Cobbler with the peach juice or vanilla ice cream and whipped cream.
  • Have fun baking!
