Filled pancakes with salad and goat cheese

Filled spelt pancakes with salad and goat cheese is a great vegetarian recipe. Delicious and healthy.

Although spelt is related to wheat, it is usually better tolerated. The whole grain version of the grain contains plenty of minerals and fiber. Lamb’s lettuce and fresh goat cheese are top calcium source, which strengthens our bones and teeth.

If there are any pancakes leftover, they also taste great, filled with fruit and yogurt. This would be a delicious and balanced breakfast.

Ingredients
  

  • 100 g Wholemeal spelt flour
  • 200 ml milk (3,5 {23a935e40810e147a9f2406802bc54b2b4fd42064446c8b6538bcc40c333c187} fat)
  • 2 eggs
  • 1 carrot
  • 100 g Lamb's lettuce or baby spinach
  • 2 tbsp Olive oil
  • 1 tbsp balsamic vinegar
  • 80 g Soft goat cheese (45 {23a935e40810e147a9f2406802bc54b2b4fd42064446c8b6538bcc40c333c187} fat)
  • 15 g roasted pine nuts (1 tablespoon; or sunflower seeds)
  • salt and pepper

Instructions
 

  • Mix the flour well with milk, eggs, 2-4 tbsp. Water and salt to a smooth dough and let swell for about 10 minutes.
  • Meanwhile, peel carrots and cut them into strips. Wash lamb's lettuce and shake dry—mix one tablespoon oil with vinegar and season with salt and pepper.
  • Fry four pancakes until golden brown on both sides.
  • Cut goat cheese into 6-8 slices. Place lettuce, carrot strips, and goat cheese in the center of pancakes and drizzle with dressing and sprinkle seeds. Fold in half or quarters and serve immediately.
